Crunchy sesame noodle and lime salad with chicken
Serves 4
- 200g (7oz) rice or egg noodles
- 1 bottle sesame oil
- 2 chicken breasts
- Salt and pepper
- 4 spring onions
- 1 red onion
- Small bunch coriander
- Sesame seeds
- 4 limes (2 in wedges, 2 juiced)
- 1 bottle sweet chilli sauce
Cold noodles sound icky but this quick noodle salad is delicious
and dead easy to do.
First cook the noodles in plenty of boiling water until
they are just done. Run them under cold water to stop them cooking further.
Drain and oil them lightly with sesame oil. Roast the chicken breasts in the
oven with salt and pepper and a little sesame oil. Allow them to cool and slice
thinly. Cut the spring onions and red onion finely and chop the coriander.
When you are ready for lunch, mix all the ingredients
together, finishing with the coriander, sesame seeds, lime juice and sesame
oil, with a little sweet chilli sauce over the top. This is healthy, delicious
and really good on a hot, lazy summer afternoon.
